When my children started on solid foods I used to make these delicious cookies for them (they are great as finger food). Of course I ended up eating them too because they are delicious and super healthy.
In all honesty it has been a long time since I baked some of these delicious cookies but yesterday when I went to pick up my son from nursery we discovered in his school bad an extremely ripe banana. Of course I wasn’t just going to bin it so we decided to bake cookies with it.
He was super excited and wanted to take them to school the next day to share with his class mates. There wasn’t really enough for one each but they all managed to have a taste and apparently they really enjoyed it too.
These delicious cookies are Dairy Free, Vegan, Vegetarian and only take 15 minutes to bake. That’s right, no nasty or processed stuff just good natural ingredients. They are perfect for breakfast or as a super healthy sweet treat.
You can vary them by adding some of the following:
- chocolate chips
- peanut butter
- chopped nuts
- dried fruits
- Coconut shavings
- vanilla extract
So this is how I make these super healthy and delicious cookies.
3-Ingredient Banana, Oats and Raisins Cookies
- 2 ripe bananas (mashed)
- 1 cup porridge oats
- 1/4 cup raisins (chopped)
- Pre-heat the oven 180º
- In a bowl add the mashed bananas, oats and raisins. Combine well.
- Line a over tray with some baking parchment paper. Spoon the mix onto the tray.
- Bake for 15 min (approx.)
- Allow the cookies to cool down completely before eating.
