I never really had a problem with my kids eating habits. They have always eaten cooked and raw vegetables without any fuss and love fruit. Recently though they have started to say they don’t like certain vegetables and refuse to eat them. I’m not sure why this is but I am putting it down to a phase and hope that they will soon snap out of that so called phase and start eating everything without fuss again just like they used to.
I’m however determined to still feed them the vegetables they are refusing and so I’ve come up with this delicious Italian style hidden vegetable pasta sauce. Even my husband loves it and I can tell you that’s quite an achievement as he is quite hard to please. So if you are struggling to get some veggies in your littles or just want to try something a little different and healthy I would suggest you give this recipe a go.
Italian Style Hidden Vegetable Pasta Sauce
1 medium carrot
1 medium courgette (peeled)
2 garlic cloves
1 can of chopped tomatoes
1 vegetable stock cube
Pinch of sugar
1 tsp dried oregano
1 tbsp olive oil
- Heat the olive oil in a large saucepan, add the garlic finely chopped. Cook until golden and then add the chopped carrot and courgette. Cook for a couple minutes with the lid on.
- Add the tinned tomatoes, pinch of sugar, stock cube and oregano. Simmer for 20 min.
Serve with pasta shapes or spaghetti and a generous shaving of parmesan. Alternatively, you can also use this as a base for a bolognese or a sauce for meatballs.
